You "turned off the function?" What function, the follow function? Even with your profile set on limited viewing as it is, people can still follow you. Just hover over your name on this thread, and there's the follow button, available to everyone, even members on your ignore list.
You "turned off alerts/notifications" of your activity? Again, nope. No one needs any alerts to seen all of your activity. Anyone can do that hover thing of which I spoke, click on the number under "Messages," and a page with all your comments appears. Right up to the minute if it's refreshed. That even works for members you have on "ignore;" even members you believe you've blocked from seeing your profile. I can't see your profile and it worked for me.
Lastly,
Must followers of yours share your interests? No, and many will not. Some people might follow you and not even like anything you say or believe in. In fact, some will follow you and not even like you at all.
Again, if you haven't stated your desire for no one to follow you, which is your right, they will follow you no matter what.

Unfortunately, tracking cannot be turned off, there is only one option, turning off the notification. This way, the user does not receive a notification under the bell icon when I do something, but has to manually click on my comments.
