But my point is that if we're just walking up or down the escalators, it's the same amount of time and foot traffic as if it was a regular staircase

No it isn't. The speed of the escalator is added to the speed of your walking, resulting in faster transit. Just like a moving sidewalk at the airport, which you don't fucking ride either.

Exactly. They make walking like running and running like sprinting. That's the entire idea.
Other wise you can just walk in the regular still floor area of the terminal.
