It's actually taking a whole lot longer than I had anticipated. I'm in 1 hour and 10 minutes and the vegetables are only beginning to soften up. I bumped up the temperature from 345 to 365 degrees to hopefully speed up the process. It should be good though, it a beef, carrot, potato, and onion stew in a beer broth. With a touch of two different hot sauces, beef bullion, and black pepper added.

I'm going to give it 20 more minutes, but if I don't see any real progress with the softness of the vegetables, I think I'm going to give up and just dump it in a pot and finish it off on the stove. Unfortunate since I've made made a cornish hen dish before with carrots, bell peppers, and onions at the bottom, and the oven really does give it a different flavor.

I feel ya. I've definitely had my fair share of meals that are just "filling." Sometimes I'll make ramen noodles with canned chicken and broccoli tossed in, with some seasoning of course. Takes about 5-7 minutes to make in the microwave but it normally does hit the spot and isn't half bad.

I never was one for ramen but I've got plenty of 10-minute pasta packets at the back of my pantry. Perfect for when I don't have the time, energy, materials or money for anything better.

Welp, I'm calling it. Timer just went off and the carrots and potatoes and carrots are still fairly stiff after a whole 1 hour and 30 minutes. Into the pot it went to be cooked on medium low heat. Hopefully it'll still retain some of that oven roasted flavor once it's finished. I could have bumped the heat up to 380 gave it another 20 minutes, but even though the glass dish is "oven safe" I don't want to push it. The oven is also seriously heating up my house.

I would probably have put it on a lower temperature for a longer time. Slow cooking cooks slowly, after all. If you're out of time though, you've got to make do.

Indeed. I thought it would only take about 1 hour and 20 minutes to make in total as it took about that to make the cornish hen dish awhile back. I'm not planning on sitting around for like 2 hours and 20 minutes in total for it to finish. I'm hungry now dangit!
