What's the actual process for staring in bestiality movies

I *think* Art of Zoo takes submissions from people. They have quality standards and whatever else going but I think a lot of their content is shot by others, if not all, and they act like a book publisher would. Check their site.

To have anything of quality you'd need 3 cameras.

you have a very busy house, that would make it hard
to achieve
 
I think you should contact AoZ and ask them if they might recommend anyone trustworthy in your area who could help you with it. But starting on your own is a good idea, so they knew that you are really ready for it. Cell phone and GoPro cameras give some great possibilities.

The trustworthy part is so important to me. I can't think of a time when I'm more vulnerable than when a dog is locked inside of me

This is one side of the whole thing, for sure. But that person has to be trustworthy by all possible means. Not only in that they won't take any advantage of you while you're having sex, but also that they won't, for example, blackmail you with the video or release it in a manner that enables identification, or anything else you can think of. Its has to be someone you can fully trust with the very intimate part of your life, who can guarantee your safety and comfort. I hope, you'll find someone appropriate although it may take time.
