I know Clerks II has a pretty explicit bestiality subplot, but off the top of my head I can't recall references from his other movies.

I'm no authority on Kevin Smith's movies, butI think it's probably just a trope that he's known for. The film industry is weird with its tropes. Quentin Tarantino is known for pretty much everyone dying in his movies, Michael Bay is known for gratuitous car chases and explosions that do nothing to advance the plot, hell even the Wilhelm Scream (you'll recognize it as soon as you Google it) is used by producers in movies as a film industry insider joke. The bestiality theme just sounds like him sticking to his original recipe.

Actually pretty much every producer and director despise it and refuse to allow its use. It's sound engineers who have adopted it as a badge of honor to successfully slip it past the directors/producers.
